Instructions:
Prepare your campfire or charcoal grill, ensuring you have medium-high heat ready for cooking.

Cut four large pieces of heavy-duty aluminum foil, approximately 12x18 inches each, and set them aside.

In a small bowl, combine the minced garlic, lemon juice, olive oil, chopped parsley, salt, and pepper. Stir well to create a marinade.

In a separate large bowl, add the sliced zucchinis, yellow squash, red and yellow bell peppers, and red onion.
