Ingredients:
1 lb. lamb or beef (chuck), cut into 1-inch pieces
1 large onion, chopped
3 cloves of garlic, minced
3 medium carrots, peeled and chopped
3 medium potatoes, peeled and chopped
2 cups beef broth
1 cup water
1 tsp. dried thyme
1 tsp. dried rosemary
Salt and pepper, to taste
2 tbsp. all-purpose flour
2 tbsp. cold water
Fresh parsley, chopped for garnish
Instructions:
Turn on the Instant Pot and set it to “Sauté” mode. Add the meat and cook until browned on all sides, about 5-7 minutes.
Add the onion, garlic, carrots, potatoes, beef broth, water, thyme, rosemary, salt, and pepper to the Instant Pot. Stir to combine.
Place the lid on the Instant Pot and set it to “Manual” mode for 20 minutes.
Once the cooking time has finished, allow the pressure to release naturally for 10 minutes. Then, quick release any remaining pressure.
In a small bowl, whisk together the flour and cold water. Slowly pour this mixture into the Instant Pot, stirring continuously, until the mixture thickens, about 2-3 minutes.
Serve the Irish Stew hot, garnished with fresh parsley. Enjoy!
