 Chicken Parmesan Pasta

  • 2 boneless, skinless chicken breasts
  • 1 cup Italian or panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 cup all-purpose flour
  • 2 cups marinara sauce (we recommend: Rao's Homemade Tomato Sauce)
  • 1 cup shredded mozzarella cheese
  • 7oz spaghetti or your favorite pasta
  • Salt and pepper, to taste
  • Olive oil, for frying
  • Fresh basil or parsley for garnish

  1. Prep the Chicken:
  • Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with salt and pepper.
  • In a shallow dish, beat the egg. In another dish, mix the breadcrumbs with Parmesan cheese.
  • Dredge each chicken breast first in flour, then dip in the egg, and finally coat with the breadcrumb mixture.

  1. Cook the Chicken:
  • Heat olive oil in a large skillet over medium heat.
  • Fry the chicken breasts until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove and set aside.

  1. Prepare the Pasta:
  • Cook the pasta according to package instructions until al dente. Drain and keep warm.

  1. Assemble and Bake:
  • Preheat your oven to 375°F (190°C).
  • In a baking dish, spread a thin layer of marinara sauce.
  • Place the fried chicken on top of the sauce. Spoon more sauce over the chicken.
  • Sprinkle mozzarella cheese generously over the chicken.
  • Bake for about 15-20 minutes, or until the cheese is bubbly and golden.

  1. Serve:
  • Toss the cooked pasta with the remaining marinara sauce.
  • Serve the chicken on a bed of pasta. Garnish with fresh basil.

  1. Enjoy a Romantic Meal:
  • Plate your dish beautifully, light some candles, and enjoy this delicious meal with your loved one.
