  7. Salt, to taste (remember feta is already salty)
  8. Freshly ground black pepper, to taste
  9. 1/4 cup toasted pine nuts or almonds (optional for crunch)
  10. Optional: Balsamic reduction or glaze for drizzling


  1. Prep the Ingredients: Cube the watermelon into bite-sized pieces and place them in a large bowl. Thinly slice the red onion, chop the mint leaves, and crumble the feta if not already crumbled.
