Mexican Chicken and Rice
Ingredients:
2 tablespoons olive oil

1 green bell pepper, diced
1 cup uncooked white rice
1 and 1/2 cups chicken broth
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and black pepper to taste
1/4 cup chopped fresh cilantro

Instructions:
Set your Instant Pot to sauté mode and add the olive oil. Once the oil is hot, add the chicken and sauté for about 5 minutes, or until the chicken is browned on all sides.

Add the onion, garlic, red bell pepper, and green bell pepper to the Instant Pot and sauté for another 3-4 minutes, or until the vegetables are tender.

Add the rice, chicken broth, smoked paprika, ground cumin, chili powder, salt, and black pepper to the Instant Pot. Stir everything together to combine.
Close the Instant Pot lid and set the valve to sealing position. Set the Instant Pot to manual high pressure for 8 minutes.

After the cooking time is up, allow the Instant Pot to natural release for 10 minutes. After 10 minutes, use the quick release method to release any remaining pressure.

Open the Instant Pot lid and fluff the rice with a fork. Stir in the chopped cilantro and serve the chicken and rice mixture in bowls.

Notes:
You can customize this recipe by adding other vegetables or spices to the chicken and rice mixture. Some good options include peas, corn, black beans, diced tomatoes, or hot sauce. The style made in this recipe is more South American. Adjust the herbs and spices to your own liking.

If you prefer brown rice, you can substitute it for the white rice in this recipe. Keep in mind that brown rice will require a longer cooking time, so you may need to adjust the cooking time accordingly.

A Keto option would be to use Cauliflower Rice.
